Last week we had a really rainy day. And in my world there is only one thing to do on a rainy day-bake chocolate chip cookies. (Actually I lied. There are two things to do-you also have to snuggle up and read a good book.) Anyway, I got a lot of cookies that made, but I wanted to give them a fun new spin, so I dipped them in chocolate and then added more yumminess with coconut, Reese’s peanut butter cups or salted caramel! Easy and fun!
So many possibilities! You could do plenty of other things too!
Dipped Chocolate Chip Cookies:
To make these you are going to start out with a basic chocolate chip cookie recipe. Here’s my favorite:Print
Chocolate Dipped Chocolate Chip Cookies (with Coconut, Reese’s or Caramel!)
- 3/4 Butter-slightly melted
- 1 C sugar
- 1 C brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3 C flour
- 2 C chocolate chips
- Cream butter and sugars
- Add eggs and mix in
- Add dry ingredients and mix
- Stir in chocolate chips
- Roll into 1 inch balls
- Bake on 375 degrees for 11-13 minutes
Once your cookies are completely cooled, you are ready to dip them. To do this:
- About 6-8 oz of milk chocolate chips
- 1 Tbsp shortening
Mix in deep bowl in microwave for about 30 seconds. Stop and stir. Repeat. And then repeat a third time until they are completely melted.
Then simply dip the cookies in so they are covered in chocolate about halfway up:
Let excess chocolate run off, then place on a cookie sheet lined with something that won’t let the cookies stick. I use a Silpat mat. You could also try wax paper or grease it heavily.
Before the chocolate sets up, sprinkle with coconut:
Or crushed Reese’s:
Or you can drizzle it in caramel sauce and then sprinkle with kosher salt:
Or, you can add sprinkles! Since it’s close to Valentine’s day I did Valentine’s sprinkles! So fun!
