If there’s one thing to love about Fall (of course there are LOTS of things to love about Fall really), it’s the warm, comfort food right? I drink hot chocolate every morning, I bake like a crazed woman, I make soup and bread for dinner. Today I’ve got two easy recipes for great Fall comfort food for you. Sweet Pork Tacos and Sweet Pork Quesadillas (with cilantro lime dipping sauce):
The best part of this is that you can cook up a whole batch of pork in your slow cooker and use it for BOTH of these recipes. Have them on several nights during one week, or, it freezes amazingly so you can save some for later.
In fact, when I make this recipe I buy a big pork loin from Costco, cut it in half and freeze half. Then I cook half in my slow cooker, use some for dinner and freeze the rest of that. What I am saying is you get a bunch of meals out of the one pork loin which is awfully handy right?
Now through October 25th you can save $2.50 per package on Pork Loin at Costco. Grab some for this week and more to freeze and then try these two recipes!
Sweet Pork Recipe:
- 5 lbs of pork loin (This is half of a pork loin from Costco. I freeze the rest for later.)
- 24 oz of salsa (I really recommend Jack’s Salsa from Costco for this. I blend it in the blender first.)
- 2-4 cups of brown sugar
In the morning put your pork in the crock pot on low with the fat part of the pork on top. Pour your salsa and 2-3 cups of brown sugar on top.
Pop the lid on and walk away. Let it cook for about 8 hours or so.
Remove the pork from the crock pot and discard the layer of fat on top.
With two forks shred the pork. It should easily fall apart at this point:
Once it is shredded put it back in the crock pot and let it continue to cook for 30 minutes to an hour. Sometimes I throw in a little more brown sugar at this point. It’s up to you. Stir it around in the sauce good.
Sweet Pork Tacos Recipe:
Now, with your pork cooked, let’s make tacos.
I topped my tacos with sweet pork, shredded cheese, tomatoes, cilantro and the amazing Cilantro Lime Dressing from the recipe below. (Trust me, you want to try this dressing!) Top it with anything else you like as well, just make sure you have the sweet pork and the dressing though because that’s the best part.
Cilantro Lime Dressing Recipe:
1 pkg. Hidden Valley Ranch dressing Mix
8 oz. jar Salsa Verde
Generous Shake of garlic powder
¾ cup Mayo
¾ cup sour cream
¼ tsp Tabasco Sauce
About 1 Tbsp lime juice
A handful of cilantro (chopped if your blender can’t handle chopping it for you)
Throw it all in a blender and mix till smooth. It’s best if made a few hours before.
Sweet Pork Quesadillas:
Now for the pork quesadillas. For these I still use the Tortilla Land tortillas. Place two on a griddle and begin to cook them. As they begin to cook flip them once. Add some shredded cheese to one of them and then top with the cooked sweet pork.
Put the other partially cooked tortilla on top and cook for another minute. Flip the whole thing and cook till golden brown. Cut into quarters with a pizza cutter.
Dip in the Cilantro Lime Dressing.
