Life is hard! Am I right? If I stop to think about all of my friends who have something hard going on in their life right now, it’s pretty much all of them-at least to some degree. There’s the big hard things and even just the day to day life hard things. Are you ever like me and you just wish you could do something, anything to help those friends who are struggling? The hardships of life can weigh me down when I think about it too much. But in my own hard times in life I’ve noticed something-when a friend does something, no matter how small, it matters. With that reminder on my mind, I try to make life a little sweeter by doing little things to make a friend smile and have a little bit better day. These cookies will do just that.
I mean seriously-how could you NOT feel at least a little bit better about your day while eating one of these? You’re sure to add a little happiness and a smile to someone’s life with a delivery of these cookies.

Triple Chocolate Toffee Cookie Recipe:
Ingredients: (be sure to check the ingredients lists below for the frosting and toppings ingredients before you shop)
- 1 1/2 C brown sugar
- 2 Tbsp water
- 3/4 C LAND O LAKES® Salted Butter (1 and a half sticks)
- 2 C semi sweet chocolate chips
- 2 eggs (beaten)
- 1 tsp salt
- 1 1/4 tsp baking soda
- 3 1/2 C flour
Instructions:
Preheat your oven to 350 degrees.
Sift flour, salt, and baking soda together and set them aside.
In a large pan on the stove over medium-high heat, melt your brown sugar, water and margarine together and stir and continue to heat until it just boils.
Remove from heat and immediately stir in your chocolate chips. Mix until melted.
Beat your eggs with a fork and then stir them into the chocolate mixture.
Add the dry ingredients and stir them in with a fork until completely combined. If your dough seems runny (and like you can’t make blobs with it) add a tiny bit more flour.
Roll into large balls-about 2 inches big.
Bake about 8-10 minutes-until they crack a little bit.
Set them aside to cool and make the white chocolate buttercream frosting.
White Chocolate Buttercream Frosting Recipe:
- 2 sticks LAND O LAKES® Salted Butter, softened
- 1 C white chocolate chips
- 4-5 C powdered sugar
- 1/4 C milk
Instructions:
Beat your butter just a couple of seconds with a mixer.
Melt your white chocolate in the microwave on high for about 30 seconds. Stir it and microwave again till melted (probably about 30 more seconds) until it is nice and smooth:
Pour the white chocolate in with the butter and beat the two together.
Add 4 cups of the powdered sugar and the milk. Add the extra cup of powdered sugar as needed to get the frosting thick enough to spread on a cookie.
Put It All Together:
Extra Ingredients Needed:
- Toffee Bits
- Caramel Sauce (I prefer to make my own, or you can use store bought)
- Milk Chocolate to melt
- Tsp of shortening
Once the cookies are cool, frost them with the white chocolate butter cream.
Melt your chocolate with a tiny bit of shortening to get a consistency that makes it drizzle-able. Then drizzle the cookies with the chocolate.
Drizzle with your caramel sauce.
Sprinkle with toffee bits.
Oh yum!
