I have a few major weaknesses in life and caramel popcorn is definitely one of them.
I love anything that’s super chewy and super sweet, meaning this caramel popcorn recipe is perfect because it’s both of those things.
I love the chewy, sweet goodness and when it’s in my house I can’t stop eating it! It’s just so good! Here is a very easy, yummy caramel corn recipe for you! I hope you love it as much as I do!

Caramel Corn Recipe:
Ingredients:
- 2 bags of cooked microwave popcorn
- 2 sticks of butter (1 Cup)
- 1/2 C light Karo syrup
- 1 1/3 C sugar
- 1 tsp vanilla
Caramel Popcorn Instructions:
Cook your popcorn. Try to remove as many un-popped kernels as possible. Set this aside in a large bowl.
On the stove in a small pan, mix your other 4 ingredients over medium high heat until it boils. Boil for 1 and a half minutes.
Pour this over your popcorn and mix and mix until it’s all coated. It will take a decent amount of mixing to get it like that.
Let it sit for a couple of hours before eating for best results!

I make caramel corn every Christmas for friends and family. This past Christmas I made 28 large bags. My recipe is not like yours I use brown sugar, less butter (corn already butter) and less syrup. don’t know how many people told me to sell it at our local farmer’s market during the holidays I’d become a millionaire! I don’t think so, LOL. It is an additive treat for sure.
