S’mores Popcorn

I am about to introduce you to something very bad. Bad because once you start you won’t be able stop eating it. I can tell you that first hand because I gobbled this up today. It’s S’mores Popcorn. Kind of unconventional, but good. Oh so good.

S'mores Popcorn Recipe

I promise that you want to try this. But only if you have strong will power or someone to share it with.

S’mores Popcorn Recipe:

2 bags of microwave popcorn
1/2 C karo syrup
1 1/3 C sugar
1/4 C cocoa
2 sticks butter
1 tsp vanilla
1/2 bag mini marshmallows
5-7 graham crackers broken into pieces

Instructions:
Pop the popcorn and pour it into a very large bowl. If you need to, split it between 2 bowls.

Combine karo, sugar, cocoa, butter and vanilla in a saucepan and heat until they boil, stirring constantly. Boil for 90 seconds and then remove from the heat.

Now, work fast. Pour the chocolate mixture over your popcorn. Using a wooden spoon, stir it quickly to coat all of the popcorn. Now pour in your marshmallows and stir them in as well. Do the same with your graham crackers. After the popcorn mixture has cooled slightly, toss in a few more marshmallows (because the ones you already added will be melty and covered in chocolate and it is nice to be able to see some marshmallows). Cover in an airtight container until ready to serve.

And then try not to eat the whole bowl.

I’m trying to think outside of the box for my son’s birthday treat he’s going to take to school. Do you think these will hold up in individual baggies if made the night before?
