All you need to do is bake the cookies and make sure they are completely cooled. Then pick any kind of ice cream and put it inside. It takes about 1-2 scoops. I will admit-I use my (clean) fingers to smooth the ice cream around the edges.
You can make them ahead of time and freeze them, though keep in mind that your cookies will be frozen too. Or, you can make them in the moment. It can be really fun to let people choose their cookie and their ice cream combo themselves.
Here are the two cookie recipes that I used.
Peanut Butter Chocolate Chip:
- 1 C softened butter
- 1 C peanut butter
- 1 C white sugar
- 1 C brown sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp vanilla
- 3 1/2 C flour
- 12 oz chocolate chips
You know the drill-mix, blog onto cookie sheets and press them down a little with your hand or a fork. Bake at 375 for about 9-11 minutes. (Softer is better)
Chocolate Chocolate Chip:
- 1 C butter (softened)
- 1 C sugar
- 1 C brown sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp salt
- 1 Tbsp vanilla
- 2 1/4 C flour
