Ice Cream Sandwiches

If there are two things I love in life, it’s cookies and ice cream. OK, well, I could probably add a lot of other things to that list too, but I really do love cookies and I really do love ice cream. Put those together? Good stuff.
I recently made these cookie ice cream sandwiches for a church activity and you’d think I’d worked a miracle. They were a hit! They are easy and you probably could have figured these out yourself, but just in case you didn’t, here’s a couple of great cookie ice cream sandwich recipes.
You probably also know that I LOVE peanut butter and chocolate together (cookies, cake, cupcakes). Here’s a peanut butter and chocolate combo:

Or my next favorite, chocolate and mint:

All you need to do is bake the cookies and make sure they are completely cooled. Then pick any kind of ice cream and put it inside. It takes about 1-2 scoops. I will admit-I use my (clean) fingers to smooth the ice cream around the edges.

You can make them ahead of time and freeze them, though keep in mind that your cookies will be frozen too. Or, you can make them in the moment. It can be really fun to let people choose their cookie and their ice cream combo themselves.

Here are the two cookie recipes that I used.

Peanut Butter Chocolate Chip:

  • 1 C softened butter
  • 1 C peanut butter
  • 1 C white sugar
  • 1 C brown sugar
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla
  • 3 1/2 C flour
  • 12 oz chocolate chips

You know the drill-mix, blog onto cookie sheets and press them down a little with your hand or a fork. Bake at 375 for about 9-11 minutes. (Softer is better)

Chocolate Chocolate Chip:

  • 1 C butter (softened)
  • 1 C sugar
  • 1 C brown sugar
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 Tbsp vanilla
  • 2 1/4 C flour
Combine ingredients and mix. Bake at 350 degrees for 9-10 minutes or so. (I like mine soft, so I do 9 minutes.)
