These chocolate coconut Christmas cookies are so good you won't want to eat them just for Christmas! Soft and chewy chocolate cookie topped with coconut frosting and Christmas sprinkles makes this a festive and yummy treat!
Sift flour, salt, and baking soda together and set them aside.
In a large pan on the stove over medium-high heat, melt your brown sugar, water and margarine together and stir and continue to heat until it just boils.
Remove from heat and immediately stir in your chocolate chips. Mix until melted.
Beat your eggs with a fork and then stir them into the chocolate mixture.
Add the dry ingredients and stir them in with a fork until completely combined. If your dough seems runny (and like you can’t make blobs with it) add a tiny bit more flour.
Roll into large balls-about 2 inches big.
Bake about 8-10 minutes-until they crack a little bit. Press flat with the bottom of a cup. This will also create a little crater for your frosting.
Set them aside to cool and make the coconut buttercream frosting.
