I mentioned a while back that I made a bunch of flavors of trifle in little mason jars for a gathering at my house. Today I am going to share with you the second of those recipes. This one is a Lemon Bar with Raspberries and Creme. Sound good? Here’s my mini Raspberry Lemon Trifle:
I’m going to admit to you that I haven’t tasted this. I am not a fruit eater. I eat chocolate. But my hubby requested this and said it was fantastic!
And it’s easy to make too! Really easy and will impress your guests.
Here’s how to make it!
Lemon Raspberry Trifle Recipe:
Bake the following Lemon Bars:
- 1 lemon cake mix
- 2 eggs
- 1/3 C oil
Combine ingredients and press into pan. (It will be thick. I use my hands to press the dough into place.)
Bake for 15 minutes or so (until lightly browning) at 350 degrees.
Assemble the trifle:
- Lemon bars/brownies (see above)
- Cool whip
- Raspberries-I just bought a bag of the frozen ones because they were out of season, but of course you can get fresh if that is possible
Once the lemon bars are cooled, break them (or cut) into 1 inch square pieces.
Place a layer of lemon bar pieces on the bottom of your mason jar. (You can also do this in a trifle bowl, I just did individual ones because I thought it was cute.)
Add a layer of cool whip on top of that and then a layer of raspberries.
Repeat those layers-lemon bars, cool whip and top with raspberries and you’re done!
