Last week my 3-year-old son was in the hospital with viral meningitis. (He’s doing better now-though still on the mend.)
We were showered with love from friends and family. And one of those friends showered us with a darling caramel apple that looked like Frankenstein’s monster! It was so cute. She bought it at a local chocolate store, but I knew I could make one just like it and had ideas for more, so I had to give it a go!
So while my little sicky is sleeping, I’ve been dipping apples and making these cute Halloween caramel apples!
First of all, I love eating caramel apples! So yummy and so perfect at this time of year aren’t they? But make them cute and forget about it-it’s like complete perfection! This is a perfect gift to take to a friend. (Trust me, I know from experience.)
Halloween Caramel Apples Recipe & Tutorial:
- 8-10 Apples-sour apples are better for caramel apples. I recommend Gala, Honey Crisp or Granny Smith
- 2 bags of caramels (Find these either in the Halloween section or the baking section near the chocolate chips)
- Sticks-I used sucker sticks, you can also use popsicle sticks
- Edible eyes (Again, these can be found in the baking section, though not at all stores. I get mine at Target. Craft stores may have them as well)
- Melting chocolates in green, white and orange
- Candy corn and brown sprinkles for Frankenstein’s monster
Unwrap all of your caramels. (Put on a good movie or something or maybe round up your kids for help because this part takes a while.)
Place unwrapped caramels in a deep bowl. Add about 2-3 Teaspoons of milk. The chocolate will stick better if the caramel is thicker but the caramel won’t go as far, so use milk sparingly.
Wash your apples, remove the stem and stick your stick down in them. Set these aside.
Heat the caramels in the microwave for 2-3 minutes, stopping to stir about every 30 seconds. Heat until they are completely melted and smooth.
Dip your apples in the caramel. You can turn the apple side to side to get it completely covered. Let the excess caramel drip off and even scrape the bottom a little to remove excess caramel if needed.
Place on a heavily greased cookie sheet or on a Silpat Mat. (I recommend the Silpat mat if possible!)
Place these in your refrigerator and allow them to set up completely so that the caramel is firm.
Get your little edible eyes ready. Melt your chocolates in a deep bowl. Microwave for several minutes stirring every 30 seconds or so. When it is completely melted and smooth, dip your apple. Again, allow excess to drip off or wipe it off from the bottom. Let it set up just a little and then stick the eyes in place. Refrigerate immediately to allow the eyes to set in place.
If your chocolate is dripping down too much, gently use your finger to smear it back how you want it.
For the mummy, once it is dry, place some of your melted white chocolate in a Ziploc bag, snip off a corner and drizzle the chocolate across the mummy face. Refrigerate again to set.
Place these in cupcake liners or on parchment paper and deliver to a friend! Or eat them yourself!
