Here’s a new little spin on cookies and it adds peanut butter and chocolate in, which makes it fantastic! Not just any chocolate and peanut butter, but a chocolate cookie in cup form filled with peanut butter mousse and topped with whipped cream and sprinkled with mini Reese’s Pieces. As I was making them my kids kept walking through the kitchen and going crazy. They couldn’t wait till I let them try one! And when we did try them, they were great!
It’s a pretty simple little recipe and it makes people smile. Let’s make them ok?
Chocolate Peanut Butter Cookie Cups:
Ingredients for the Cookie Part:
- 2 1/4 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 sticks butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs, beaten
- 1 Tbsp vanilla extract
- 1/2 cup unsweetened cocoa
Preheat oven to 350 degrees.
Combine above ingredients to make cookie dough.
(This should make about 12 cookie cups.)
Grab a muffin tin and grease the it. Take a large cookie dough ball and press it down into the muffin tin. Gently press it into a cupping shape:
Bake for 8-10 minutes. As you take them out, you may need to gently shape the cup shape again:
Now you will fill them with the peanut butter mousse.
Ingredients for Peanut Butter Mousse:
- 2 C Heaving Whipping Cream
- 1/2 C peanut butter
- 1/4 powdered sugar
Using an electric mixer, beat your whipping cream until it is creamy and can form peaks.
Add your peanut butter and powdered sugar and mix ONLY until they are mixed in. Do not mix any longer than that.
Put the mousse into a Ziploc bag and snip off one corner.
Pipe it into the chocolate cookie cup:
Top with whipped cream and sprinkle with mini Reese’s Pieces.
