One of the things I love the most about summer is grilling. We live in a beautiful spot, in a gorgeous location and I love to sit in my backyard with my family and friends and enjoy summer evenings and BBQ. These Thai Peanut Chicken Skewers are one of my favorite things to have because they are easy and taste great!
They are sort of spicy and very peanuty. Love it! Here’s the recipe.
Thai Peanut Chicken Skewers:
- 1/2 C Peanut Butter
- 1/2 C water
- 1/4 C soy sauce
- 1/2 tsp garlic powder
- 3 T lemon juice
- 2 T brown sugar (packed)
- 3/4 tsp ground ginger
- 1/2 tsp Cayenne pepper
Mix all of these ingredients in a small pot on the stove until warm and thoroughly incorporated.
Cut 3 boneless chicken breasts into long strips. Skewer the chicken onto kabob sticks. (It’s best to soak the sticks in water for a while prior to using them so that they won’t burn.)
Begin to grill the chicken.
Baste periodically with the sauce.
Cook until done. Add one more layer of the sauce.
These can be good served with rice or just plain.
You can also skewer pineapple and cover it in the sauce and grill it as well!
